例の有名なミシュランガイド?


オーストラリアのABCという放送局のウェブサイトに先日放送された「東京ミシュランガイド」の掲載があります。

Tokyo's tucker takes out coveted prizeという題名の放送です。

東京のミシュランガイドの本によると、東京のレストランに与えられたミシュランの星の数はNYとパリの両方を合計した数より多いんだそうです。知らなかった!

その後、核心に迫っていくのですが、ある日本の美食研究家の見解として「ミシュランの星をつける方法が謎であることが問題。外国人が来て日本料理の神髄を判る知識と経験を積んでいるんだろうか」と言っています。
それも一理ある!
2つの星を獲得したある鮨屋のご主人は「ミシュランから極めて限られた人数が来て食事をしてそれで星の数を決める。私は多くの方に楽しんで貰いたいので辞退を依頼した」
本当の職人魂ではないでしょうか?

それぞれ言い分がTVの中で述べられています。
既にミシュランの「権威とか、歴史のある神聖な本」などという魔法は過去のものになってしまっています。
特に点数化することの出来ない”食事”は当然異論の対象となります。これは時代の流れ。109年ミシュランは星をつけてきた、という事実は過去の栄冠を誇るだけです。
ミシュランはこれから車のタイヤ以外の分野でどう戦うのか見ものです。

JEAN-LUC NARET: When you have this amount of success, it brings a little bit of controversy as well. Why we let this French guy coming here and tell us where we should go for eat?
MARK WILLACY: Caustic critics like Yuya Tomosata are not alone in questioning the methods of Michelin. Even some of those who've been awarded the coveted stars are underwhelmed. In Tokyo, Mitsuyasu Nagano is venerated as the high priest of sushi.
Mitsuyasu Nagano's Zen-like discipline and his devotion to his art have earned his restaurant two stars in Michelin's guide. But this is one chef who shuns inclusion in the holy book.

MITSUYASU NAGANO (voiceover translation): I don't mind Michelin reviewing restaurants, but I was enraged that so few people are judging and giving out rankings and stars. I told them I didn't want any part of it. I cannot be involved. I think all that matters is that people enjoy their meal. Eating is not something you should think too hard about.
